Hazelnut Purchase
During the harvest, growers provide the KHAN-EL processing facility with small samples of their hazelnuts. KHAN-EL workers analyze the nuts in a laboratory to determine their moisture content and to identify any signs of decay. If the hazelnuts meet KHAN-EL’s exacting standards of quality, the processing facility offers to buy growers’ nuts at a specific price.

Initial Processing
Before undergoing further processing, the moisture of the hazelnuts must be reduced to between 7.0 and 7.5 percent. During the drying process, drying tanks are filled with nuts, where their moisture content is reduced.

Sorting
The sorted hazelnuts are then taken to an additional sorting line, where dust and shell remnants are removed. They are sorted by size, with certain sizes being selected for additional processing based on customer preferences.

Cracking
Some customers prefer hazelnuts with their hard outer shells removed. In this case, workers remove the outer shell on the cracking line. The cracked hazelnuts pass through to the lobe sorting line.

Lobe Sorting
After the hazelnuts are cracked, they go to the next station: lobe sorting. The hazelnuts are fed into lobe tanks based on their dimensions (from 9 to 17 millimeters). Here, they are further dried to within acceptable standards. During this process, rotten hazelnuts are identified and removed from further processing.

Packing
International standards dictate that there should be no visible decay on processed hazelnuts. Moisture content must also be between 5.5 and 6.0 percent. Hazelnuts are checked in the laboratory to ensure they meet these standards. After this process is completed, the hazelnuts are packed into sacks according to their size.

Distribution
After the hazelnuts are neatly packed, they are fumigated for two days to ensure that they meet phytosanitary standards. Once this process is complete, they are ready to be sold and distributed to buyers!
